This quick lunch or dinner is AMAZING!! It's loaded with flavor AND super healthy!!! You can always use homemade tortilla wraps instead of lettuce, but I love the crunch! Veggie friends, please feel free to leave out the chicken and it's just as satisfying and filling!!! 💚
What you'll need: (serves 4) -Blender or food processor -1 cup shredded chicken (use the last of your whole crockpot chicken here so you don't waste a bit!) -1 can organic chickpeas (drained) -1/3 bag of organic romaine hearts -1/3 cup Frank's Redhot Sauce -1/4 cup of bluecheese for drizzle per wrap (I leave this out because I'm avoiding to much dairy) -1/2 cup shredded cheddar -3 ribs of celery (diced, reserve one diced rib for topping) -1/2 Avocado -2 Roma tomatoes (chopped) -Salt&Pepper -Drizzle of Avocado Oil (can use oil of choice, but I prefer healthy high heat cooking oils) Directions: -Add Chickpeas, Chicken, and Redhot Sauce to blender and pulse a few times. You want it combined but not puréed -Prep a pan on med-low heat with the drizzle of your oil, when hot add celery to bottom, let simmer for about 6-7 minutes -Now add buffalo mix to the pan to warm through, please taste and adjust hot sauce as needed -Add S&P To assemble: -Place lettuce cups on the plate, generously scoop buffalo mix to cups -Add tomato, avocado, and extra celery to top -Then if interested drizzle with Blue Cheese dressing Fold and Enjoy!!!!
